Description

This peanut butter jelly snack bread is a delicious twist on the classic sandwich. It combines creamy peanut butter, fresh strawberries, and a peanut streusel topping for a delightful treat.


Ingredients

  • ¼ cup brown sugar (packed)
  • ¼ cup all-purpose flour
  • ¼ cup crushed peanuts
  • 3 tablespoons butter (melted)
  • ¾ cup brown sugar (packed)
  • 1 cup milk
  • 2 eggs
  • ¾ cup creamy peanut butter
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped strawberries
  • ½ cup strawberry jam

Instructions

  1. Preheat the oven to 350 degrees. Grease a 9×5 inch loaf pan and line with parchment paper if desired.
  2. To make the peanut streusel, mix brown sugar, flour, and peanuts in a small bowl. Add melted butter and mix until crumbly. Refrigerate while preparing the bread.
  3. In a large bowl, whisk together sugar, milk, eggs, and peanut butter until combined.
  4. Add flour, baking soda, and salt. Mix with a rubber spatula until just combined, then fold in chopped strawberries.
  5. Dollop strawberry jam over the batter. Fold the jam into the batter a few times to create swirls.
  6. Pour the batter into the prepared loaf pan and spread into an even layer. Add extra chopped strawberries on top if desired.
  7. Remove streusel from the fridge, break it up, and sprinkle over the top of the batter.
  8. Bake for 60-75 minutes, or until a toothpick inserted in the center comes out mostly clean.
  9. Remove from the oven and cool on a wire rack for 1 hour in the pan before slicing.
