  • 1 can (16.3 oz) refrigerated biscuit dough (8 large biscuits)
  • 1 pound bulk breakfast beef sausage
  • ¼ cup all-purpose flour
  • 2 ½ cups whole milk, warmed
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh chives, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper.
  2. Arrange biscuit dough from 1 can on the parchment-lined sheet, pressing together to form a uniform rectangular crust. Par-bake for 8-10 minutes until lightly golden. Remove and set aside; leave oven on.
  3. In a large skillet, brown beef sausage over medium-high heat, breaking it up. Drain excess fat, leaving 2-3 tablespoons drippings in the pan. Transfer cooked sausage to a plate.
  4. Reduce heat to medium-low. Sprinkle flour into drippings; whisk constantly for 1-2 minutes to form a roux.
  5. Gradually whisk in warm milk, a little at a time, until smooth and lump-free. Bring to a gentle simmer for 5-7 minutes, stirring, until thickened. Stir in cooked sausage, ¼ teaspoon salt, and ½ teaspoon black pepper. Keep warm.
  6. In a medium bowl, whisk eggs with a pinch of salt and pepper. Scramble in a non-stick skillet over medium-low heat until mostly set but still moist (3-5 minutes). Do not overcook. Set aside.
  7. Spread warm beef sausage gravy over the par-baked biscuit crust. Sprinkle half of the shredded cheddar cheese over the gravy.
  8. Distribute scrambled eggs evenly over the cheese. Top with remaining shredded cheddar cheese.
  9. Bake for 15-20 minutes, or until cheese is melted, bubbly, and golden-brown. Remove from oven and let rest for 5-10 minutes.
  10. Garnish with chopped fresh chives (if using). Slice into squares or wedges and serve hot.
