Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.
  2. In a large mixing bowl, combine the Greek yogurt, milk, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract. Whisk until smooth and well combined.
  3. In another bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Gently fold in the fresh blueberries, taking care not to break them up.
  6. Using a spoon or an ice cream scoop, fill each muffin cup about ¾ full with the batter. If desired, sprinkle a little extra lemon zest and a teaspoon of sugar on top of each muffin for an added crunch and flavor.
  7. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
