Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.
- In a large mixing bowl, combine the Greek yogurt, milk, vegetable oil, eggs, lemon zest, lemon juice, and vanilla extract. Whisk until smooth and well combined.
- In another bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the fresh blueberries, taking care not to break them up.
- Using a spoon or an ice cream scoop, fill each muffin cup about ¾ full with the batter. If desired, sprinkle a little extra lemon zest and a teaspoon of sugar on top of each muffin for an added crunch and flavor.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
