- 75 g Caster (superfine) sugar
- 10 g Fine sea salt
- 7 g Fast-action dried yeast
- 300 ml Whole milk (warm slightly for yeast activation)
- 3 large Eggs (for dough and egg wash)
- 100 g Unsalted butter (room temperature)
- 300 ml Coffee custard (made with your preferred blend)
- 100 g Lightly spiced crumb topping (streusel-style)
- 30 g Grated chocolate (for garnish)
Instructions
- In a large bowl, mix the plain flour, strong white bread flour, caster sugar, fine sea salt, and fast-action dried yeast. Gradually add warm milk, beaten eggs, and softened butter.
- Turn the mixture onto a floured surface and knead until smooth and elastic, about 8-10 minutes.
- Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm spot until nearly doubled in size—about 1 hour.
- Punch down the dough and divide it into equal pieces. Shape each piece into a ball and flatten it slightly.
- Brush the edges of the wells with egg wash. Fill each well with your rich coffee custard.
- Sprinkle the lightly spiced crumb mixture generously around the filled custard wells.
- Cover the shaped buns with a cloth again and let them rise for an additional 30-45 minutes.
- Preheat your oven to 350°F (175°C). Bake for 20-25 minutes, until golden brown.
- After cooling slightly, grate chocolate over the top to add a beautiful and elegant finish.
