- 4 pieces bone-in chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup balsamic vinegar
- 4 pieces fresh figs
- 2 cloves garlic, minced
- 2 teaspoons fresh rosemary
- 2 tablespoons chopped parsley
- 1 loaf crusty bread
Instructions
- Pat the chicken thighs dry and season with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat and sear chicken for 6-7 minutes until golden brown.
- Remove the chicken from the skillet and set aside.
- In the same skillet, lower the heat, add minced garlic, and sauté until fragrant.
- Pour in balsamic vinegar and let bubble for a minute or two.
- Add fresh figs and return the chicken to the skillet, skin-side up, sprinkle with rosemary.
- Cover and simmer on low heat for 20-25 minutes until chicken is cooked through and figs are soft.
- Serve topped with figs and sauce, garnished with chopped parsley, and enjoy with crusty bread.
