Ingredients

  • 4 pieces bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup balsamic vinegar
  • 4 pieces fresh figs
  • 2 cloves garlic, minced
  • 2 teaspoons fresh rosemary
  • 2 tablespoons chopped parsley
  • 1 loaf crusty bread

Instructions

  1. Pat the chicken thighs dry and season with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear chicken for 6-7 minutes until golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, lower the heat, add minced garlic, and sauté until fragrant.
  5. Pour in balsamic vinegar and let bubble for a minute or two.
  6. Add fresh figs and return the chicken to the skillet, skin-side up, sprinkle with rosemary.
  7. Cover and simmer on low heat for 20-25 minutes until chicken is cooked through and figs are soft.
  8. Serve topped with figs and sauce, garnished with chopped parsley, and enjoy with crusty bread.
