Savory Vietnamese Lemongrass Pork Bowl for Easy Weeknight Eats
Ingredients
Scale
- 500 g pork mince
- 1 stalk lemongrass, bruised and finely chopped
- 2 tbsp vegetable oil
- 1 small onion, finely sliced
- 2 large mild chillies, finely sliced
- 3 cloves garlic, finely chopped
- 2 tbsp brown sugar
- 2 tbsp fish sauce
- 1 tsp sweet dark soy sauce
- 1 tsp corn flour mixed with 1 tsp water
- ¼ tsp ground pepper
- 1 birds’ eye chilli, finely sliced
- 2 tbsp roughly chopped coriander (optional)
- steamed rice
Instructions
- In a wok, heat 1 tablespoon of vegetable oil over high heat. Add the chopped lemongrass, chillies, and sliced onion. Stir-fry for 2 minutes, then toss in the garlic.
- Shift the veggies to the side and pour in the remaining 1 tablespoon of oil. Add the pork mince, stir-frying for about 2 minutes until it’s almost cooked through.
- Stir in the brown sugar, fish sauce, and sweet dark soy sauce. Let it simmer for 3-4 minutes until the liquid almost evaporates.
- Mix in the corn flour mixture to thicken the sauce. Season with ground pepper to taste, then remove from heat.
- Divide the savory pork mixture among bowls of freshly steamed rice. Top with sliced birds’ eye chilli and chopped coriander.
Notes
- This dish is best served hot.
- You can adjust the spice level by adding more or fewer chillies.
