Description

Delicious Vegan Savoury Muffins, packed with flavorful veggies, are a perfect balance of health and comfort food.


Ingredients

Scale
  • 3 cups all-purpose plain flour
  • 0.25 cups nutritional yeast
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 1 tablespoon dried mixed Italian herbs
  • 2 teaspoons garlic powder
  • 0.5 teaspoon salt
  • 1.25 cups dairy-free milk
  • 0.5 cups light olive oil
  • 1 tablespoon apple cider vinegar
  • 1 cup grated zucchini
  • 1 cup grated carrot
  • 1 cup red capsicum
  • 0.5 cup baby spinach leaves
  • 3 tablespoons raw pumpkin seeds

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 12-cup muffin tray with muffin cases.
  2. Combine all of the dry ingredients in a large mixing bowl and whisk them together until well blended.
  3. Mix in all the wet ingredients and veggies, stirring gently until just combined.
  4. Scoop the batter into the muffin pan using an ice cream scoop or a large spoon, filling each cup with small mounds.
  5. Sprinkle pumpkin seeds on top of each muffin if you’d like that bit of extra crunch.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the muffins in the pan for 5 minutes before transferring them to a cooling rack.
