  • 290 g Tapioca starch
  • 70 g All-purpose flour
  • 73 g Rice flour
  • 2 teaspoons Baking powder
  • 1 cups Sugar
  • 0.25 teaspoons Salt

Instructions

  1. Combine ube halaya and ube extract in a bowl, whisk in water gradually until smooth.
  2. Beat eggs in a large bowl until fluffy, then mix in cooking oil, ube mixture, and milk.
  3. Sift tapioca starch, flour, baking powder, salt, and sugar in a separate bowl.
  4. Mix half of the wet ingredients into the dry mixture gently.
  5. Cover batter with a cloth and let it rest for an hour.
  6. Preheat waffle maker to medium-high and grease lightly.
  7. Scoop about 2 tablespoons of batter into the waffle maker.
  8. Cook waffles for about 1 minute and 30 seconds until golden.
  9. Serve warm with toppings like fruits or coconut cream.
