Instructions
- Combine ube halaya and ube extract in a bowl, whisk in water gradually until smooth.
- Beat eggs in a large bowl until fluffy, then mix in cooking oil, ube mixture, and milk.
- Sift tapioca starch, flour, baking powder, salt, and sugar in a separate bowl.
- Mix half of the wet ingredients into the dry mixture gently.
- Cover batter with a cloth and let it rest for an hour.
- Preheat waffle maker to medium-high and grease lightly.
- Scoop about 2 tablespoons of batter into the waffle maker.
- Cook waffles for about 1 minute and 30 seconds until golden.
