Irresistible Sweet Chilli Peanut Chicken Nachos, perfect for a cozy gathering or a weeknight treat.
Ingredients

- 250 g tortilla chips
- 2 tbsp vegetable oil
- 1 large onion
- 2 large capsicums (bell peppers)
- sea salt
- 1/2 rotisserie-cooked chicken
- 200 g grated mozzarella cheese
- 1 tbsp unsalted roasted peanuts
- handful coriander (cilantro) leaves or spring onion (scallions)
- 1/3 cup smooth peanut butter
- 1 tbsp dark sweet soy sauce
- 1/2 tbsp soy sauce
- 1 tbsp rice vinegar
Instructions
- In a bowl, combine smooth peanut butter, dark sweet soy sauce, soy sauce, rice vinegar, and 3 tablespoons of hot water. Whisk until smooth and set aside.
- Preheat your oven grill to high.
- Scatter the tortilla chips evenly across the base of a large baking dish.
- Heat vegetable oil in a wok. Add onion, cook for 2 minutes, then add capsicum and cook for 8-10 minutes until tender. Season with sea salt.
- Spoon sautéed capsicum mix over tortilla chips, drizzle with sweet chilli sauce, scatter shredded chicken, add spoonfuls of peanut sauce, and top with cheese.
- Place under hot oven grill for about 5 minutes until cheese is bubbly and golden.
- Remove from oven, sprinkle with coriander or spring onions, and serve immediately.
