Description

A delicious one-skillet brunch featuring eggs gently baked in a creamy, cheesy spinach and artichoke dip, inspired by the classic appetizer.


Ingredients

Scale
  • 1 Tbsp. olive oil
  • 1 small onion, chopped
  • 1 10-oz package frozen spinach, thawed & squeezed
  • 1 12-oz jar marinated artichoke hearts, drained & chopped
  • 2 garlic cloves, chopped
  • 1 tsp. kosher salt & 3/4 tsp. black pepper
  • 2 cups whole milk
  • 2 oz. cream cheese
  • 2 Tbsp. grated parmesan
  • 1 1/2 cups shredded mozzarella
  • Hot sauce
  • 8 large eggs

Instructions

  1. Preheat oven to 425°F. Sauté onion in an ovenproof skillet, then add spinach, artichokes, garlic, salt, and pepper.
  2. Reduce heat, stir in milk and cream cheese until smooth.
  3. Remove from heat and stir in parmesan and 1 cup of mozzarella.
  4. Make 8 wells in the mixture and crack an egg into each.
  5. Top with remaining mozzarella, salt, and pepper.
  6. Bake for 10-13 minutes, until the egg whites are set.
  7. Let stand for 5 minutes before serving with crusty bread.
