- 1 pound Boneless skinless chicken thighs
- 3 cloves Garlic
- 2 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 1 teaspoon Lemon zest
- 1 teaspoon Smoked paprika
- 1 teaspoon Dried oregano
- 1 teaspoon Cumin
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1/2 teaspoon Cayenne pepper
- 2 cups Persian cucumbers
- 1/2 cup Red onion
- 1 cup Plain Greek yogurt
- 1 tablespoon Fresh dill
Instructions
- In a bowl, mix olive oil, minced garlic, smoked paprika, oregano, cumin, salt, cayenne, black pepper, lemon juice, and zest. Coat the chicken thighs well and leave to marinate for at least 2 hours, or preferably overnight for maximum flavor.
- Grilling: Preheat your grill to medium-high and brush grates with olive oil. Grill the marinated chicken thighs for 5-6 minutes on each side, until they reach an internal temperature of 165°F.
- Baking: Preheat your oven to 400°F. Lightly spray a baking dish and bake the marinated chicken for 20-22 minutes until cooked through.
- In a medium bowl, combine diced Persian cucumbers and finely minced red onion. In another bowl, whisk together Greek yogurt, lemon juice, minced garlic, dill, salt, and black pepper to create a creamy dressing. Pour over vegetables and toss gently.
- Arrange the grilled chicken on plates and top with the refreshing cucumber salad before serving.
