Description

Soft and chewy peanut butter cookies with a delightful crisscross pattern, made with creamy or crunchy peanut butter and roasted salted peanuts for extra texture.


Ingredients

  • 1 cup Unsalted Butter (softened)
  • 1 cup Brown Sugar
  • 1 cup Sugar (plus 2 Tablespoons for top of cookies)
  • 1 cup Peanut Butter (creamy or crunchy)
  • 2 large Eggs
  • 2 teaspoons Vanilla
  • 2 1/2 cups Flour
  • 1/2 teaspoon Baking Soda
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Salt (optional if using salted butter)
  • 1 cup Roasted Salted Peanuts (ground or finely chopped to resemble breadcrumbs)

Instructions

  1. In a large mixing bowl, cream together the softened butter, brown sugar, and sugar for about 4 minutes until the mixture is light and fluffy. Remember to scrape down the sides of the bowl often to ensure everything is well mixed.
  2. Add in the eggs and vanilla extract. Beat this mixture for an additional minute until fully combined. Then fold in your choice of creamy or crunchy peanut butter until smooth.
  3. Stir together the flour, baking soda, baking powder, and salt in another bowl. Gradually fold these dry ingredients into your wet mixture until just combined. Finally, fold in the finely ground or chopped roasted salted peanuts.
  4. Chill the dough for at least 1 hour; overnight is ideal for better flavor development. Once chilled, preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper.
  5. Roll chilled dough into 2-inch balls. Place the remaining sugar into a small bowl and roll each cookie ball in sugar to coat them lightly. Arrange them on the prepared cookie sheet, pressing each ball twice with a dinner fork to create a crisscross pattern. Bake these delightful cookies for 10–13 minutes or until their edges turn a light golden color. Avoid overbaking; you want them soft and chewy! Let them rest on the pan for at least 5 minutes before transferring them to a cooling rack.
