Description

S’Mores Icebox Cake is a cool, luscious dessert combining chocolate, marshmallow, and graham crackers, perfect for summer gatherings.


Ingredients

Scale
  • 12 sheets Graham crackers
  • 8 oz Cream cheese (softened)
  • 7 oz Marshmallow fluff
  • 1 cup Heavy cream
  • 1 cup Hot fudge sauce (slightly warmed)
  • 1 cup Mini marshmallows
  • 1/2 cup Crushed graham crackers
  • 1/2 cup Milk chocolate pieces

Instructions

  1. In a bowl of an electric mixer, beat the softened cream cheese and marshmallow fluff until smooth and creamy.
  2. In a separate bowl, whip the heavy cream for about 4-5 minutes, or until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese and marshmallow fluff mixture until smooth.
  4. In the bottom of a springform pan, add a solid layer of graham crackers.
  5. Spread half of the creamy marshmallow fluff filling over the graham crackers.
  6. Cover this layer with a cup of mini marshmallows.
  7. Pour on half of the warmed hot fudge sauce evenly over the mini marshmallows.
  8. Repeat the process starting with the graham cracker layer until all ingredients are used.
  9. Garnish with additional mini marshmallows, crushed graham crackers, and milk chocolate pieces.
  10. Cover the pan and refrigerate for at least 6 hours, or up to 1-2 days.
