  • 2 pieces bay leaves

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and celery. Sauté for about 6-8 minutes until the vegetables soften and become fragrant.
  2. Stir in the minced garlic, oregano, and bay leaves. Cook for another 1-2 minutes until the garlic becomes golden and aromatic.
  3. Pour in the chicken broth and diced tomatoes. Add the boneless chicken breasts and bring everything to a boil.
  4. Reduce the heat and let it simmer uncovered for 25-30 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken, shred it with two forks, and return the shredded meat back to the pot, stirring to combine.
