Ingredients

  • 4 large eggs
  • 0.5 tablespoon unsalted butter
  • 2 ounces goat cheese
  • 4 slices tomato
  • 1 medium ear corn
  • olive oil
  • salt
  • pepper

Instructions

  1. Preheat your oven’s broiler on high with a rack positioned a few inches below the broiler element.
  2. Drizzle olive oil over the tomato slices, season with salt and pepper, and arrange them on a baking sheet. Broil for 8 to 10 minutes.
  3. Microwave the corn in its husk for 3 minutes on high, let it cool, then husk and cut the kernels off.
  4. In a frying pan over medium heat, melt the butter, add the corn, and season with salt and pepper. Cook for 1 minute.
  5. Pour in the eggs and scramble everything together over medium heat for fluffy eggs. Remove from heat and crumble in the goat cheese.
  6. Transfer roasted tomato slices to a plate, top with the scrambled egg mixture, and season with additional salt and pepper.
