Description
Scotcheroos are an easy no-bake dessert made with peanut butter, Rice Krispie cereal, and a chocolate, butterscotch topping. Perfect for parties, potlucks, or anytime you need a quick sweet treat.
Ingredients

- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 6 cups rice krispie cereal
- 1 cup chocolate chips
- 1 cup butterscotch chips
Instructions
- Spray a 13×9 inch pan with non-stick spray. Set aside.
- In a saucepan, mix together sugar and corn syrup over medium heat. Stir frequently, gently dissolving the sugar. Heat the mixture until it barely starts to boil with bubbles forming around the edge. Remove from heat.
- Immediately stir in the peanut butter and vanilla and mix until smooth.
- Pour over the cereal and mix until well combined.
- Press into prepared pan.
- Add chocolate chip and butterscotch chips to a microwave safe bowl. Heat for 60 seconds, stir, heat for another 30 seconds and stir until completely melted. If needed heat for another 15 seconds. Pour over bars.
- Let the chocolate set up completely before slicing to serve.
