Ingredients

  • 250 ml vegetable oil (for frying)
  • 100 g cornflour (for coating)
  • 8 g salt
  • 7 g ground black pepper
  • 7 g Chinese 5 spice
  • 450 g boneless skinless chicken thighs (cut into small pieces)
  • 15 ml vegetable oil (for stir frying)
  • 1 large onion (cut into bite-sized chunks)
  • 2 green peppers
  • 2 red chillies (adjust to taste)
  • 4 spring onions (finely sliced)
  • 5 ml salt and pepper seasoning (for final seasoning)

Instructions

  1. In a large bowl, combine the cornflour, salt, ground black pepper, and Chinese 5 spice.
  2. Pour 250ml of vegetable oil into a large frying pan over medium heat.
  3. Toss the chicken thighs in the cornflour mixture, ensuring each piece is well coated.
  4. Gently drop the coated chicken pieces into the hot oil, frying until golden brown and crispy, about 5–7 minutes.
  5. Heat 15ml of vegetable oil in a wok. Add the onion, green peppers, and red chillies, frying for about 3 minutes.
  6. Add the fried chicken and spring onions to the wok, sprinkle with the salt and pepper seasoning, and toss together.
  7. Plate your Salt and Pepper Chicken and serve immediately with a side of fluffy rice.
