- 250 ml vegetable oil (for frying)
- 100 g cornflour (for coating)
- 8 g salt
- 7 g ground black pepper
- 7 g Chinese 5 spice
- 450 g boneless skinless chicken thighs (cut into small pieces)
- 15 ml vegetable oil (for stir frying)
- 1 large onion (cut into bite-sized chunks)
- 2 green peppers
- 2 red chillies (adjust to taste)
- 4 spring onions (finely sliced)
- 5 ml salt and pepper seasoning (for final seasoning)
Instructions
- In a large bowl, combine the cornflour, salt, ground black pepper, and Chinese 5 spice.
- Pour 250ml of vegetable oil into a large frying pan over medium heat.
- Toss the chicken thighs in the cornflour mixture, ensuring each piece is well coated.
- Gently drop the coated chicken pieces into the hot oil, frying until golden brown and crispy, about 5–7 minutes.
- Heat 15ml of vegetable oil in a wok. Add the onion, green peppers, and red chillies, frying for about 3 minutes.
- Add the fried chicken and spring onions to the wok, sprinkle with the salt and pepper seasoning, and toss together.
- Plate your Salt and Pepper Chicken and serve immediately with a side of fluffy rice.
