Description

Transform regular croissants into almond croissants with rich almond flavor and delightful toppings.


Ingredients

Scale
  • 4 pieces large croissants
  • 90 g ground almonds
  • 60 g soft unsalted butter
  • 100 g golden caster sugar
  • 1 pinch salt
  • 1 small egg
  • 0.5 tsp almond extract
  • 120 ml water
  • 1 tbsp golden caster sugar
  • 1 tsp vanilla extract
  • 4 tbsp flaked almonds
  • 1 tbsp confectioners’ sugar

Instructions

  1. Preheat your oven to 175°C/350°F (fan).
  2. Slit each croissant lengthways along the outer side.
  3. Combine the glaze ingredients in a small pan and bring to a boil.
  4. Mix the ground almonds, soft unsalted butter, and golden caster sugar together in a bowl.
  5. Add a pinch of salt, the small egg, and almond extract to the mixture.
  6. Dip each croissant gently into the glaze, ensuring not to soak them.
  7. Stuff the slit croissants with half of the frangipane mixture.
  8. Sprinkle flaked almonds over the top of each croissant.
  9. Bake the croissants in the preheated oven for 12-14 minutes.
  10. Cool slightly before removing from the oven. Sprinkle with confectioners’ sugar before serving.
