Transform regular croissants into almond croissants with rich almond flavor and delightful toppings.
Ingredients

- 4 pieces large croissants
- 90 g ground almonds
- 60 g soft unsalted butter
- 100 g golden caster sugar
- 1 pinch salt
- 1 small egg
- 0.5 tsp almond extract
- 120 ml water
- 1 tbsp golden caster sugar
- 1 tsp vanilla extract
- 4 tbsp flaked almonds
- 1 tbsp confectioners’ sugar
Instructions
- Preheat your oven to 175°C/350°F (fan).
- Slit each croissant lengthways along the outer side.
- Combine the glaze ingredients in a small pan and bring to a boil.
- Mix the ground almonds, soft unsalted butter, and golden caster sugar together in a bowl.
- Add a pinch of salt, the small egg, and almond extract to the mixture.
- Dip each croissant gently into the glaze, ensuring not to soak them.
- Stuff the slit croissants with half of the frangipane mixture.
- Sprinkle flaked almonds over the top of each croissant.
- Bake the croissants in the preheated oven for 12-14 minutes.
- Cool slightly before removing from the oven. Sprinkle with confectioners’ sugar before serving.
