Decadent raw vegan tiramisu bites featuring chocolate base, coffee, and vanilla layers – a healthy dessert alternative
Ingredients

- 100 grams Dark chocolate
- 2 tablespoons Coconut oil, melted
- 3 tablespoons Maple syrup
- 75 grams Ground almonds
- 30 grams Puffed quinoa
- 200 grams Cashew nuts, soaked overnight
- 2 tablespoons Instant coffee, dissolved in hot water
- 3 tablespoons Maple syrup
- 2 tablespoons Coconut oil
- 200 grams Soaked cashew nuts
- 100 grams Coconut cream
- 3 tablespoons Maple syrup
- 1 teaspoon Vanilla paste or extract
- 50 grams Dark chocolate for drizzling
Instructions
- Grease a cupcake tin with coconut oil and insert baking paper strips into 10 holes.
- Mix chocolate base ingredients, spoon 1/8 cup into each hole, press firmly, and freeze for 15 mins.
- Blend soaked cashews for coffee layer, add remaining ingredients, blend, layer over base, and freeze for 30 mins.
- Blend soaked cashews for vanilla layer, add remaining ingredients, blend, layer over coffee mixture, and freeze overnight.
- Remove bites by running warm water over tin. Thaw for 5-10 mins before serving.
