Description
Delicious Raspberry White Chocolate Blondies, a delightful treat that embodies happiness in every bite.
Ingredients
Scale
- 1 cup all-purpose flour (Substitute with gluten-free flour for dietary needs)
- 1 cup brown sugar (Coconut sugar can be used for a lower glycemic option)
- 1/2 cup cane sugar (Swap in granulated sugar if preferred)
- 1/2 cup unsalted butter (melted) (Coconut oil can be used for a dairy-free alternative)
- 1 large egg (Use a flax egg for a vegan option (1 tbsp ground flaxseed + 2.5 tbsp water))
- 1 teaspoon vanilla extract (Almond extract can be a unique twist)
- 1/2 teaspoon salt (Salted butter can negate the need for additional salt)
- 1 cup white chocolate chips (Dark chocolate chips can be substituted)
- 1 cup fresh raspberries (Frozen raspberries can work but may change texture slightly)
Instructions
- Preheat the oven to 350°F. Line an 8×8 inch glass baking dish with parchment paper.
- Combine melted butter, brown sugar, and cane sugar in a medium mixing bowl. Stir until smooth and creamy, about 1-2 minutes.
- Mix in the egg and vanilla extract until fully incorporated.
- Add the all-purpose flour and salt to the mixture and combine gently.
- Fold in the white chocolate chips and gently incorporate the fresh raspberries.
- Spread the batter evenly in the prepared baking dish. Top with additional chocolate chips and raspberries.
- Bake for 25-30 minutes until edges are golden and a toothpick comes out mostly clean.
- Cool completely before cutting into 16 squares.
