Description

Creamy white cheese dip with green chiles, onions, and garlic, perfect for dipping tortilla chips.


Ingredients

  • 1 tablespoon unsalted butter
  • ¼ medium white onion, finely diced
  • 1 clove garlic, minced
  • 1 ½ cups whole milk, plus more as needed
  • 1 pound white American cheese, cut into small cubes
  • 1 (4-ounce) can diced green chiles
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground pepper
  • diced tomatoes and jalapeños, for garnish

Instructions

  1. Melt butter in a small skillet over medium heat. Add onion and cook for 5-8 minutes until softened. Add garlic and cook 30 seconds. Set aside.
  2. Heat milk in a medium saucepan until small bubbles form. Reduce heat to low.
  3. Add cheese cubes ½ cup at a time, whisking continuously until fully melted and smooth.
  4. Remove from heat. Stir in onion-garlic mixture, green chiles, salt, and pepper.
  5. Add more milk if too thick. Garnish with tomatoes and jalapeños. Serve with tortilla chips.
