- 20 pieces Potstickers (Frozen or fresh)
- 2 tablespoons Sesame Oil (Olive oil is a substitute)
- 3 cloves Garlic (Minced)
- 1 tablespoon Ginger (Minced or grated)
- 2 cups Mushrooms (Sliced, shiitake optional)
- 2 cups Greens (Spinach or bok choy)
- 3 stalks Green Onions (For garnish)
Instructions
- Prep Aromatics: Heat sesame oil in a large pot over medium heat. Add minced garlic and ginger, stirring for about 1 minute until fragrant.
- Build Broth: Pour in the broth and add soy sauce along with rice vinegar. Let simmer for 5-10 minutes.
- Cook Potstickers: Add frozen potstickers to the simmering broth. Cook for 5-7 minutes until heated through.
- Add Vegetables: Stir in sliced mushrooms and choice of greens. Cook until greens are wilted.
- Seasoning: Taste and adjust with salt and pepper, and add chili oil or red pepper flakes if desired.
- Serve: Ladle the soup into bowls, garnish with green onions and a drizzle of sesame oil.
