Savory Poached Chinese Chicken with Ginger Scallion Sauce, a comforting and easy dish.

  • 2 tablespoons Shaoxing Wine (Substitute with dry sherry if necessary.)
  • 3 tablespoons Soy Sauce (Swap for tamari or coconut aminos for gluten-free.)
  • 1 tablespoon Oyster Sauce (Hoisin sauce for vegetarian alternative.)
  • 1 teaspoon Salt (Adjust based on your taste.)
  • 3 tablespoons Neutral Oil (Sesame oil offers delicious twist.)
  • 1 cup Water (To reach desired sauce consistency.)
  • 1 teaspoon Sugar (Omit for a no-sugar version.)
  • 2 cups White Rice (Quinoa or cauliflower rice as low-carb alternatives.)
  • 1 cup Sliced Cucumbers (Refreshing sidekick.)

Instructions

  1. In a large pot, combine chicken drumsticks, enough cold water to cover, fresh ginger slices, white scallions, shaoxing wine (if using), and salt. Bring to a boil over medium-high heat. Reduce heat to low and simmer gently for 8-10 minutes until chicken is cooked through.
  2. Carefully transfer the chicken to a bowl of ice water to stop the cooking process. Once cool enough to handle, shred the chicken into bite-sized pieces and arrange on a plate.
  3. In a small saucepan, heat neutral oil with white parts of the scallions and ginger over medium heat until fragrant. Use a slotted spoon to remove solids, keeping the oil hot.
  4. In a heatproof bowl, pour the hot oil over the finely chopped green scallions. Carefully add soy sauce, oyster sauce, water, sugar, and additional salt. Stir well until combined.
  5. If the shredded chicken is cold, heat briefly in the microwave. Drizzle sauce over the chicken and serve with white rice and sliced cucumbers.
