- 1/2 cup lemon juice (about 3 lemons)
Instructions
- Slice 2 red onions very thin. Add them to a medium bowl.
- Sprinkle 2 teaspoons of salt on the onions. Add freshly cracked black pepper to taste.
- Squeeze the juice from 3 lemons over the onions.
- Stir and let sit for at least 5 minutes. For best results, let the onions pickle for 2-3 hours.
- Add to your favorite dishes like Turkey Burgers, Tacos, Gyros, or salads.
- Store leftovers in the brine in a sealed container for up to 2 weeks.
