Ingredients

  • 1/4 cup olive oil
  • 1 stalk celery rib (chopped)
  • 1/2 cup sliced pepperoncini
  • 1/2 cup pitted Greek olives
  • 1/2 cup cocktail onions
  • 2 tablespoons red wine vinegar
  • 1 tablespoon capers
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1/2 teaspoon celery seed
  • 1 round loaf Italian bread
  • 1/2 pound Genoa salami (sliced)
  • 1/2 pound deli ham (sliced)
  • 1/2 pound mortadella (sliced)
  • 4 slices Swiss cheese
  • 4 slices provolone cheese

Instructions

  1. In a large bowl, mix together the chopped olives, olive oil, celery rib, pepperoncini, Greek olives, cocktail onions, red wine vinegar, capers, garlic, oregano, basil, pepper, salt, and celery seed. Cover and refrigerate for at least 8 hours.
  2. Cut the round loaf of Italian bread in half horizontally. Hollow out the top and bottom halves, leaving about a 1-inch shell.
  3. Spoon half of the olive mixture over the bottom half of the hollowed bread, spreading it evenly.
  4. Layer the slices of Genoa salami, deli ham, and mortadella on top of the olive mixture. Follow with Swiss and provolone cheese, then the remaining olive mixture.
  5. Replace the bread top carefully, wrapping the entire sandwich tightly in plastic wrap. Refrigerate for at least 3 hours or ideally overnight.
  6. Cut the sandwich into 8 wedges when ready to serve.
