Description

A hearty and cheesy lasagna with ground beef, fresh spinach, and a creamy cottage cheese filling, layered with lasagna noodles and marinara sauce, baked until bubbly and golden.


Ingredients

  • 12 lasagna noodles
  • 1 lb. ground beef
  • 56 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 32 oz. spaghetti sauce
  • 5 oz. fresh baby spinach, chopped
  • 5 oz. grated Parmesan, divided
  • 8 oz. shredded whole milk mozzarella, divided
  • 24 oz. 4% milkfat cottage cheese
  • 2 large eggs
  • Kosher salt
  • fresh cracked pepper
  • fresh chopped parsley

Instructions

  1. Heat the oven to 375 degrees Fahrenheit.
  2. Cook lasagna noodles about 3 minutes less than their recommended cooking time. Toss them in olive oil to prevent sticking.
  3. In a large sauté pan over medium heat:
    1. Cook ground beef until browned, crumbling it with a spatula as it cooks.
    2. Add minced garlic, oregano, and a couple pinches of salt and pepper. Cook for about one minute while stirring occasionally.
    3. Pour in spaghetti sauce and stir until well combined.
  4. In a large bowl:
    1. Combine chopped spinach, half of the mozzarella cheese, half of the Parmesan cheese, cottage cheese, eggs, and generous pinches of salt and pepper.
    2. Mix until fully combined.
  5. Spread 1 cup of meat sauce in the bottom of a lightly greased 9×13 inch baking dish. Layer three noodles on top of the sauce, overlapping slightly. Spread one-third of the spinach filling over the noodles. Drizzle with half a cup of meat sauce followed by another layer of three noodles. Repeat layering with another one-third of spinach filling and another half cup of meat sauce. Finish with three more noodles followed by the remaining spinach filling on top. Drizzle with another half cup of meat sauce then layer with remaining noodles.
  6. Spread remaining meat sauce evenly over the top layer of noodles. Sprinkle remaining mozzarella and Parmesan cheeses on top. Cover tightly with foil and bake for 30 minutes. Remove foil and bake an additional 5 minutes until bubbly.
  7. Let sit for at least 10 minutes before slicing into squares. Garnish each slice with fresh parsley and extra Parmesan if desired. Enjoy your delicious Meaty Lasagna with Cottage Cheese!
