Deliciously Easy Mango Crumb Bars for a Sweet Treat

- 2.5 cups ripe mangoes (small chunks)
- 3–5 tbsp granulated sugar (adjust according to sweetness)
- 0.5 tbsp corn starch (helps thicken the filling)
- 2 cups all-purpose flour (base of the crumbly goodness)
- 0.5 tsp baking powder (gives lift to the bars)
- 0.25 tsp salt (enhances flavors)
- 0.75 cups cold unsalted butter (ensures a rich topping)
- 2/3 cups brown sugar (adds caramel flavor)
- 1 large egg (binds ingredients)
- 0.5 tsp vanilla extract (adds warmth and aroma)
Instructions
- Preheat your oven to 350°F.
- Prepare the mango filling by mixing mango chunks, sugar, and corn starch in a bowl.
- Combine the dry ingredients (flour, baking powder, salt) in a large bowl.
- Cut the cold butter into small chunks and incorporate it into the flour mixture until crumbly.
- Mix the wet ingredients (brown sugar, egg, vanilla extract) in a separate bowl and combine with the dry mixture.
- Press 2/3 of the crumb mixture into the bottom of a lined 8” x 8” baking pan.
- Spread the mango mixture evenly over the crust.
- Sprinkle the remaining crumb mixture over the mango filling.
- Bake for 35-40 minutes until golden brown and the filling is bubbling.
- Cool the bars for 5-10 minutes in the pan, then remove and cool further on a wire rack.
- Slice into 9 square bars and serve warm or at room temperature.
