Instructions
- In a blender, combine the lemon zest, lemon juice, coconut milk, optional water, sweetener, salt, and turmeric. Blend on high speed for about 30 seconds until smooth and creamy.
- Pour the blended mixture into a large bowl, then add the chia seeds. Stir gently for about 1 minute to ensure even distribution.
- Taste the mixture and adjust sweetness or tartness as needed, adding extra lemon juice or zest if desired.
- Transfer the mixture into serving glasses or jars and refrigerate for at least 4 hours or overnight for the best thickness.
- Once chilled, stir the pudding before topping each serving with whipped coconut cream, lemon zest, and fresh berries.
