- 2 tbsp Lime Juice
- 1 tbsp Toasted Rice Powder (Khao Khua)
- 2 medium Shallots
- 2 tbsp Green Onion
- 1/4 cup Cilantro
- 1/4 cup Mint Leaves
Instructions
- Toast Khao Khua: Heat a dry skillet over medium heat. Add raw white rice and toast, stirring constantly until golden brown and fragrant, about 4-5 minutes.
- Grind Khao Khua: Let the toasted rice cool slightly, then grind it into a coarse powder using a mortar and pestle or a spice grinder.
- Cook Chicken: In a skillet, add ground chicken with a splash of water over medium heat. Cook until the chicken is no longer pink, about 5-7 minutes.
- Mix in Flavors: Stir in fish sauce, lime juice, chili flakes, and the toasted rice powder. Blend everything well and let the mixture cook for another 2 minutes.
- Add Fresh Ingredients: Gently fold in the shallots, green onion, cilantro, and mint leaves.
- Serve Warm: Transfer the Laab Gai to a serving dish and enjoy warm, pairing it with fresh vegetables or sticky rice.
