- 1 pound Strawberries (finely diced)
- 0.25 cup Cane/Brown Sugar
- 1 tablespoon Lemon Juice (squeeze of lemon)
- 2–3 cups Non-Dairy Milk (unsweetened)
- Ice (as needed)
- 0.75 cup Macerated Strawberries (from syrup prep)
Instructions
- In a bowl, combine ¾ cup of the finely diced strawberries with 1 tablespoon of sugar. Stir gently and let it sit aside to absorb the sweetness and release juices.
- In a saucepan, combine the remaining 2 cups of diced strawberries, 3 tablespoons of sugar, and a large squeeze of lemon juice. Bring to a boil, then reduce to a gentle simmer for 10 minutes, stirring frequently until the mixture is syrupy and the strawberries are soft.
- Once thickened, remove the saucepan from heat and set the syrup in the fridge to cool until cold, allowing the flavors to meld beautifully.
- In a glass, add 2-3 tablespoons of the cooled strawberry syrup, followed by ¾ cup of your choice of non-dairy milk and some ice. Top with 1 tablespoon of the macerated strawberries for a delightful touch. Stir to combine and adjust with more syrup or strawberries if desired.
