Ingredients

  • 1 pound Strawberries (finely diced)
  • 0.25 cup Cane/Brown Sugar
  • 1 tablespoon Lemon Juice (squeeze of lemon)
  • 23 cups Non-Dairy Milk (unsweetened)
  • Ice (as needed)
  • 0.75 cup Macerated Strawberries (from syrup prep)

Instructions

  1. In a bowl, combine ¾ cup of the finely diced strawberries with 1 tablespoon of sugar. Stir gently and let it sit aside to absorb the sweetness and release juices.
  2. In a saucepan, combine the remaining 2 cups of diced strawberries, 3 tablespoons of sugar, and a large squeeze of lemon juice. Bring to a boil, then reduce to a gentle simmer for 10 minutes, stirring frequently until the mixture is syrupy and the strawberries are soft.
  3. Once thickened, remove the saucepan from heat and set the syrup in the fridge to cool until cold, allowing the flavors to meld beautifully.
  4. In a glass, add 2-3 tablespoons of the cooled strawberry syrup, followed by ¾ cup of your choice of non-dairy milk and some ice. Top with 1 tablespoon of the macerated strawberries for a delightful touch. Stir to combine and adjust with more syrup or strawberries if desired.
