- Heat the heavy cream in a saucepan over medium heat until it simmers. Remove from heat.
- Pour the hot cream over the chopped chocolate in a mixing bowl. Let it sit for 2 minutes.
- Stir in the grated orange peel using a whisk until smooth and glossy.
- Cover and refrigerate the mixture for about 90 minutes until firm.
- Scoop small portions of the mixture and roll into balls (about one inch in diameter).
- Roll each truffle in chocolate sprinkles until fully coated and place on a parchment-lined baking sheet.
- Refrigerate again for 30 minutes before serving.
