- 1 cup chopped dates
- 1 teaspoon baking soda
- 1 cup boiling water
- 4 tablespoons melted butter
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1 1/2 cups all-purpose flour
- 1/2 cup coarsely chopped walnuts or pecans
Instructions
- Preheat oven to 325°F (160°C). Grease a 4×8″ loaf pan.
- Combine dates and baking soda in bowl, pour boiling water over mixture. Let cool.
- Blend melted butter and sugar until combined. Add egg and mix until smooth.
- Strain date water into mixing bowl (discard sediment). Stir to combine.
- Gradually add flour, mixing until just combined.
- Fold in soaked dates and nuts.
- Pour batter into pan and bake 55-60 minutes (toothpick test).
- Cool in pan 10 minutes before transferring to wire rack.
Notes
- Store leftovers in an airtight container.
- Can be served warm or at room temperature.
