- 1 (14-ounce) container ice cream, any flavor
- 2 cups heavy cream
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla bean paste or vanilla extract, optional
- 1 (8.8-ounce) package Lotus Biscoff Cookies
Instructions
- Soften the ice cream on counter for 25 minutes.
- Line 9×5-inch loaf pan with plastic wrap (4 sheets total).
- Whip cream, sugar, and vanilla to medium peaks (3-4 minutes).
- Layer: 1 cup whipped cream → cookies → half ice cream → cookies → 1 cup whipped cream → cookies → remaining ice cream → cookies → 1 cup whipped cream.
- Freeze tightly wrapped for 6+ hours.
- Defrost in hot water bath 5 minutes before unmolding.
- Slice with warm knife and serve.
