- 3 very ripe bananas
- 1 cup coconut sugar
- 1/4 cup maple syrup
- 1/2 cup non-dairy milk
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
- 1/4 cup melted coconut oil
- 1 1/2 cups oat flour
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup vegan chocolate chips (optional)
- 1/2 cup walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper.
- In a large mixing bowl, mash the ripe bananas. Add coconut sugar, maple syrup, non-dairy milk, melted coconut oil, vanilla extract, and apple cider vinegar. Whisk until smooth.
- Add the oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt to the wet ingredients. Mix until just combined; do not overmix.
- Fold in vegan chocolate chips and walnuts, if using.
- Pour the batter into the prepared loaf pan. Sprinkle additional chocolate chips and walnuts on top if desired.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for 15 minutes before transferring it to a wire rack to cool completely.
