A hearty and savory Cumberland Sausage Pie featuring juicy sausages nestled in rich onion gravy, topped with golden puff pastry.

- 8 Cumberland sausages
- 2 tbsp vegetable oil
- 2 medium onions, finely sliced
- 1 tbsp all-purpose flour
- 300ml beef stock
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- 500g puff pastry
- 1 large egg, beaten (for egg wash)
Instructions
- Brown sausages in oil for 5-7 minutes. Remove from pan.
- Sauté onions in same pan until golden (5 mins).
- Stir in flour, then gradually add stock, Worcestershire sauce, thyme, salt, and pepper.
- Return sausages to pan, nestling into gravy.
- Preheat oven to 200°C (180°C fan). Roll pastry to fit pan.
- Cover filling with pastry, trim edges, cut steam vents, brush with egg wash.
- Bake 25-30 mins until golden. Rest before serving.
