Instructions
- Preheat your oven to 325°F (165°C). Line a large baking sheet with parchment paper.

- In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla extract.

- Spread the granola mixture in an even layer on the prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until golden brown and fragrant.
- Let the granola cool completely on the baking sheet to allow it to cluster.
- Once cooled, stir in dried cranberries if using, then break the granola into clumps.
- Store in an airtight container.
