Description

Garlic Butter Roasted Shrimp Skewers are a quick and flavorful seafood dish, perfect for any occasion. Succulent shrimp are coated in a rich garlic butter sauce with hints of lemon and spice, then roasted to perfection.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped for garnish
  • Skewers (wooden or metal)

Instructions

  1. In a large bowl, combine the peeled and deveined shrimp with minced garlic, lemon juice, lemon zest, smoked paprika, red pepper flakes, salt, and black pepper. Toss until the shrimp are evenly coated. Allow marinating for 15-20 minutes for optimal flavor.
  2. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, ensure they are clean and ready to use.
  3. Preheat your oven to 400°F (200°C) for roasting.
  4. Thread the marinated shrimp onto the skewers. Depending on the size of the shrimp, you can fit about 4-5 shrimp per skewer.
  5. In a small saucepan or skillet, melt the unsalted butter over medium heat. Once melted, remove from the heat and stir in any leftover marinade mixture from the shrimp. This will enhance the garlic flavor.
  6. Place the shrimp skewers on a baking sheet lined with parchment paper or lightly greased. Brush generous amounts of the garlic butter over the shrimp.
  7. Roast in the preheated oven for about 8-10 minutes, or until the shrimp are pink and opaque, flipping halfway through cooking.
  8. Once cooked, remove from the oven and drizzle more garlic butter over the skewers. Garnish with freshly chopped parsley and additional lemon wedges, if desired.
  9. Serve hot as a delicious appetizer or with a side of rice and grilled vegetables for a full meal.

Notes

  • For a more intense flavor, marinate the shrimp for up to an hour.
  • If using a convection oven, adjust cooking time as needed.
  • Ensure shrimp are not overcrowded on skewers for even cooking.
