  • 1 teaspoon Five spice powder
  • 1 cup Cold sparkling water (adjust for consistency)
  • 23 inches Neutral oil (for deep frying)
  • 1 teaspoon Salt (for seasoning before serving)
  • 2 tablespoons Furikake (Japanese seasoning)
  • 1/2 cup Sweet chili sauce (for dipping)
  • 1/2 cup Sriracha Mayo (for serving)

Instructions

  1. Prepare the Mushrooms: Slice the dirt end of the enoki mushrooms about 1 inch above the base, then cut them vertically into 1/4 inch thin layers.
  2. Heat the Oil: In a heavy-bottomed pot, gently heat about 2-3 inches of neutral oil over medium-high heat until it reaches 375°F (190°C).
  3. Mix the Batter: In a large mixing bowl, combine the all-purpose flour, potato starch, baking powder, salt, white pepper, garlic powder, paprika, cayenne pepper, and five spice powder. Gradually whisk in cold sparkling water until the batter is smooth.
  4. Dredge the Mushrooms: Coat the mushrooms individually in the batter, allowing any excess to drip off.
  5. Fry to Perfection: Carefully add the battered mushrooms into the hot oil and fry for about 1-2 minutes or until golden brown.
  6. Season and Serve: Sprinkle the fried mushrooms with a pinch of salt and furikake. Serve alongside sweet chili sauce and sriracha mayo.
