Feta Watermelon Salad That’ll Refresh Your Summer Meals

- 4 cups arugula
- 4 cups watermelon
- 1 medium red onion
- 1 cup feta cheese
- 1/4 cup mint

- 1/2 cup balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
Instructions
- Whisk together the balsamic glaze by combining balsamic vinegar, Dijon mustard, and honey in a small bowl. Mix well until it’s smooth and set aside.
- Arrange arugula in an even layer on a large serving dish.
- Layer watermelon and red onion evenly on top of the arugula.
- Sprinkle feta cheese generously over the watermelon.
- Drizzle the balsamic glaze over the entire salad, then gently toss to combine all the ingredients.
- Season the salad with freshly ground pepper and sea salt to taste, then garnish with julienned mint.
- Serve immediately to enjoy all the flavors at their best.
