Ingredients

  • 4 cups watermelon
  • 1 medium red onion
  • 1 cup feta cheese
  • 1/4 cup mint

Instructions

  1. Whisk together the balsamic glaze by combining balsamic vinegar, Dijon mustard, and honey in a small bowl. Mix well until it’s smooth and set aside.
  2. Arrange arugula in an even layer on a large serving dish.
  3. Layer watermelon and red onion evenly on top of the arugula.
  4. Sprinkle feta cheese generously over the watermelon.
  5. Drizzle the balsamic glaze over the entire salad, then gently toss to combine all the ingredients.
