Description

Decadent Eggnog Crepes with Irresistible Eggnog Sauce. These Eggnog Crepes bring holiday cheer with rich flavors and a creamy sauce, perfect for festive occasions.

Ingredients

Scale
  • 3 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 pinch salt
  • 2 cups eggnog
  • 1.5 cups all-purpose flour
  • 0.125 teaspoon granulated sugar
  • 0.125 teaspoon salt
  • 2 large eggs
  • 2 cups eggnog
  • 0.25 cup milk
  • butter, melted, for cooking
  • powdered sugar
  • pomegranate arils

Instructions

  1. Combine the flour, sugar, and pinch of salt in a double boiler. Gradually whisk in the eggnog until smooth and velvety.
  2. Heat the mixture over medium heat, stirring continuously until thickened (about 8 minutes). Once done, remove from heat, cool slightly, and refrigerate until ready to serve.
  3. In a large mixing bowl, whisk together the flour, sugar, and salt. Create a well in the center, and crack in the eggs, mixing gently.
  4. Slowly pour in the eggnog while whisking, then add the milk, ensuring not to overmix for the best texture.
  5. Cover the batter and refrigerate for at least one hour, or overnight if desired. Before cooking, give it a gentle stir and add milk if necessary to achieve a heavy cream consistency.
  6. Warm a crepe pan or a 7-inch nonstick skillet over medium heat. Brush the surface with melted butter to prevent sticking.
  7. Pour 3 to 4 tablespoons of batter into the pan, quickly tilting and swirling to coat the bottom evenly.
  8. Cook for 1-2 minutes until edges pull away, then use a spatula to flip the crepe. Cook the other side for about 1 minute until lightly golden.
  9. Slide the cooked crepe onto a plate. Repeat with the remaining batter, brushing with butter between crepes for optimal cooking.
  10. Serve your delicious Eggnog Crepes topped with the eggnog sauce, a sprinkle of powdered sugar, and vibrant pomegranate arils for a festive touch.
