Description

Date-Me Chicken blends savory chicken thighs, sweet dates, and aromatic herbs into a delightful dish perfect for cozy dinners.


Ingredients

Scale
  • 23 lbs chicken thighs
  • 1 tsp kosher salt
  • ⅛ tsp black pepper
  • 1 cup chicken stock
  • 1 cup white wine
  • 2 tsp Dijon mustard
  • 1 tsp thyme leaves
  • 2 cloves garlic
  • 1 whole lemon
  • 4 large shallots
  • 1 ½ cups dates
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the shallots by peeling and quartering them.
  3. Quarter the dates after removing the pits.
  4. Slice the lemon thinly.
  5. Mince the garlic.
  6. Pat the chicken thighs dry, and season with salt and pepper.
  7. Heat a skillet over medium heat, adding olive oil.
  8. Place the chicken skin-side down and cook for 5-7 minutes until golden brown.
  9. Flip the chicken and cook for another 5-8 minutes.
  10. Remove the chicken and set aside.
  11. Pour in the white wine and reduce by half.
  12. Stir in the Dijon mustard, chicken stock, and thyme.
  13. Add the dates, shallots, lemon slices, and garlic.
  14. Place the chicken back on top of the mixture.
  15. Transfer the skillet to the oven and bake for 10-15 minutes.
  16. Remove from the oven and let rest for 5 minutes before serving.
