- 2–3 lbs chicken thighs
- 1 tsp kosher salt
- ⅛ tsp black pepper
- 1 cup chicken stock
- 1 cup white wine
- 2 tsp Dijon mustard
- 1 tsp thyme leaves
- 2 cloves garlic
- 1 whole lemon
- 4 large shallots
- 1 ½ cups dates
- 1 tbsp olive oil
Instructions
- Preheat the oven to 400°F.
- Prepare the shallots by peeling and quartering them.
- Quarter the dates after removing the pits.
- Slice the lemon thinly.
- Mince the garlic.
- Pat the chicken thighs dry, and season with salt and pepper.
- Heat a skillet over medium heat, adding olive oil.
- Place the chicken skin-side down and cook for 5-7 minutes until golden brown.
- Flip the chicken and cook for another 5-8 minutes.
- Remove the chicken and set aside.
- Pour in the white wine and reduce by half.
- Stir in the Dijon mustard, chicken stock, and thyme.
- Add the dates, shallots, lemon slices, and garlic.
- Place the chicken back on top of the mixture.
- Transfer the skillet to the oven and bake for 10-15 minutes.
- Remove from the oven and let rest for 5 minutes before serving.
