- 1 cup peanut butter chips
- 1/4 cup peanut butter (creamy)
- 2 tbsp powdered sugar
- 1 cup all-purpose flour
- 1 1/3 cup cake flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tbsp cornstarch
- 1 tsp salt
- 1 cup butter (softened)
- 1 cup granulated sugar (plus extra for rolling)
- 1 cup light brown sugar (packed)
- 1 cup peanut butter (creamy)
- 2 tsp vanilla extract
- 2 large eggs
- 2–4 tbsp peanut butter (creamy)
Instructions
- Preheat the oven to 410°F and line a baking sheet with parchment paper.
- In one bowl, whisk together dry ingredients: all-purpose flour, cake flour, baking soda, baking powder, cornstarch, and salt.
- In another bowl, cream together softened butter, granulated sugar, and light brown sugar until fluffy.
- Mix in creamy peanut butter until combined; then add eggs one at a time along with vanilla extract.
- Gradually fold the dry mixture into the wet mixture until just combined.
- Gently fold in peanut butter chips.
- Using a cookie scoop or tablespoon, portion out dough balls onto the prepared baking sheet and roll in extra granulated sugar.
- Bake for about 10 minutes until edges are golden but centers remain soft.
- Allow cooling on the baking sheet for 5 minutes before transferring to wire racks.
