- 4 medium Sweet potatoes
- Kosher salt and black pepper (to taste)
- 1 cup Grated parmesan cheese
- 1/2 cup Grated asiago or manchego cheese
- 2 cups Panko bread crumbs
- 1 teaspoon Paprika
- 1/2 teaspoon Cayenne pepper
- 1/2 teaspoon Onion powder
- 1/2 teaspoon Garlic powder
- Extra virgin olive oil (for brushing)
- 6 tablespoons Salted butter (melted with garlic and thyme)
- 2 tablespoons Fresh thyme leaves
- 2 teaspoons Chopped fresh sage
- Chili flakes (a pinch to taste)
Instructions
- Preheat the oven to 425°F (220°C) and prick the sweet potatoes with a fork.
- Cool and mash the baked sweet potatoes until smooth, then mix in cheeses and seasonings.
- Prepare the coating by mixing Panko and spices in a shallow bowl.
- Form bite-sized cylinders from the sweet potato mixture, coat with Panko, and brush with olive oil.
- Bake for 15 minutes, flip, and then bake for another 15 minutes until golden brown.
- Melt butter, add garlic and thyme, drizzle over bites, and sprinkle with remaining cheese, sage, and chili flakes.
