Description

Decadent French toast with a caramelized sugar topping, combining the richness of creme brulee with classic breakfast comfort.

Ingredients

Scale
  • 6 thick slices Brioche or Challah or Texas Toast (1-inch thick)
  • 6 large eggs
  • 2 extra egg yolks
  • 1.5 cups heavy cream
  • 1/4 cup granulated sugar
  • 2 tsp vanilla extract or paste
  • 1/4 tsp salt
  • 3 tbsp unsalted butter
  • 1/4 cup granulated sugar (for caramelized topping)
  • 2 tbsp Turbinado Sugar (Optional)

Instructions

  1. Cut brioche or challah into thick, approximately 1-inch slices. Lay them out on a wire rack.
  2. Whisk eggs, yolks, heavy cream, sugar, vanilla, and salt in a shallow dish until smooth.
  3. Soak bread slices in custard for 30+ minutes (or overnight), flipping halfway through soaking time.
  4. Cook soaked bread in buttered pan over medium heat for 3-4 minutes per side until golden brown.
  5. Sprinkle sugar on cooked French toast and caramelize with kitchen torch or broiler.
  6. Serve immediately while caramelized topping is still crisp.
