Ingredients

- 6 thick slices Brioche or Challah or Texas Toast (1-inch thick)
- 6 large eggs
- 2 extra egg yolks
- 1.5 cups heavy cream
- 1/4 cup granulated sugar
- 2 tsp vanilla extract or paste
- 1/4 tsp salt
- 3 tbsp unsalted butter
- 1/4 cup granulated sugar (for caramelized topping)
- 2 tbsp Turbinado Sugar (Optional)
Instructions
- Cut brioche or challah into thick, approximately 1-inch slices. Lay them out on a wire rack.
- Whisk eggs, yolks, heavy cream, sugar, vanilla, and salt in a shallow dish until smooth.
- Soak bread slices in custard for 30+ minutes (or overnight), flipping halfway through soaking time.
- Cook soaked bread in buttered pan over medium heat for 3-4 minutes per side until golden brown.
- Sprinkle sugar on cooked French toast and caramelize with kitchen torch or broiler.
- Serve immediately while caramelized topping is still crisp.
