Ingredients

  • 1 large Egg (essential for meatball structure.)
  • 4 cloves Garlic (minced) (can use garlic powder for milder taste.)
  • 1 tbsp Italian Seasoning (can replace with individual herbs.)
  • to taste tsp Salt & Black Pepper (adjust to your preference.)
  • 1 cup Heavy Cream (coconut cream can be a non-dairy alternative.)
  • 2 cups Spinach (chopped) (can substitute with kale or Swiss chard.)
  • 1/2 cup Sun-Dried Tomatoes (chopped) (fresh tomatoes can be used for different texture.)
  • 1/4 cup Parmesan Cheese (grated) (can replace with nutritional yeast for vegan option.)
  • 1 tbsp Olive Oil (avocado oil can be a substitute.)
  • to taste leaves Fresh Basil (garnish can be omitted if desired.)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, almond flour, egg, minced garlic, Italian seasoning, salt, and pepper until well mixed.
  3. Shape the mixture into 1 to 1.5-inch diameter balls and arrange them on the baking sheet.
  4. Bake the meatballs for 20-25 minutes until browned and fully cooked through.
  5. Heat olive oil in a skillet over medium heat, then add chopped spinach and sun-dried tomatoes, cooking until the spinach wilts.
  6. Pour in the heavy cream and let it simmer until the sauce thickens slightly.
  7. Stir in the grated Parmesan cheese, mixing until fully melted and the sauce is creamy.
  8. Toss the meatballs gently in the creamy sauce until well coated.
