- 1 pound chicken sausage (mild or spicy, based on preference)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 large potatoes, diced (Yukon gold or red potatoes work well)
- 4 cups kale, stems removed and chopped
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (adjust based on spice preference)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese (optional for garnish)
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and sauté for 5 minutes until translucent.
- Add garlic and cook for 1 minute, stirring constantly.
- Add chicken sausage, breaking it apart with a spatula. Cook 5–7 minutes until browned.
- Stir in potatoes and thyme until coated.
- Pour in chicken broth, bring to a boil, then simmer for 15 minutes until potatoes are tender.
- Add kale and red pepper flakes. Simmer for 5 minutes until kale wilts.
- Lower heat, pour in heavy cream, and warm through without boiling.
- Season with salt and pepper. Garnish with Parmesan if desired.
