Description

A hearty and creamy soup with savory sausage, tender potatoes, and nutritious kale, perfect for a cozy meal.


Ingredients

Scale
  • 1 pound chicken sausage (mild or spicy, based on preference)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 large potatoes, diced (Yukon gold or red potatoes work well)
  • 4 cups kale, stems removed and chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (adjust based on spice preference)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese (optional for garnish)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion and sauté for 5 minutes until translucent.
  2. Add garlic and cook for 1 minute, stirring constantly.
  3. Add chicken sausage, breaking it apart with a spatula. Cook 5–7 minutes until browned.
  4. Stir in potatoes and thyme until coated.
  5. Pour in chicken broth, bring to a boil, then simmer for 15 minutes until potatoes are tender.
  6. Add kale and red pepper flakes. Simmer for 5 minutes until kale wilts.
  7. Lower heat, pour in heavy cream, and warm through without boiling.
  8. Season with salt and pepper. Garnish with Parmesan if desired.
