A refreshing and creamy seafood salad featuring imitation crab, crisp vegetables, and a tangy dressing. Perfect for sandwiches, salads, or crackers.
Ingredients

- 1 lb imitation crab, shredded into chunks
- 1 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- ½ cup celery, finely diced
- ¼ cup red onion, minced
- ½ cup corn kernels (drained if canned)
- Salt and black pepper, to taste
- 1 tbsp fresh dill, chopped (optional)
- Lettuce leaves, for serving
Instructions
- In a large bowl, mix mayonnaise, lemon juice, and Dijon mustard until smooth.
- Break the imitation crab into bite-sized pieces and gently fold them into the dressing.
- Add celery, red onion, and corn. Stir gently to combine. Season with salt and pepper, and add fresh dill if desired.
- Cover and refrigerate for at least 30 minutes (1 hour or longer is best) to allow the flavors to meld.
- Enjoy the salad cold over lettuce, in sandwiches, or with crackers.
