Description

Cranberry Macarons offer a delightful blend of tart cranberries and sweet orange buttercream, perfect for any occasion.

Ingredients

Scale
  • 100 grams egg whites
  • 100 grams granulated sugar
  • 4 grams egg white powder
  • 105 grams almond flour
  • 105 grams powdered sugar
  • food coloring
  • 3/4 cup cranberries
  • 3 tbsp granulated sugar
  • 4 tbsp orange juice
  • 4 tbsp unsalted butter
  • 1 1/3 cups confectioners’ sugar
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1/2 – 1 tbsp milk

Instructions

  1. Prepare the piping bag: Gather a large piping bag fitted with a round tip and set aside. Line two baking sheets with parchment paper or a silicone mat.
  2. Sift the dry ingredients: Sift the powdered sugar and almond flour together into a bowl, ensuring a smooth texture.
  3. Whisk the egg whites: In a mixing bowl, whisk the sugar and egg white powder, then add egg whites. Whisk until frothy.
  4. Beat to stiff peaks: Whisk on low speed for 30 seconds, then medium until white and fluffy, then on high until stiff peaks form.
  5. Combine ingredients: Gently fold in sifted powdered sugar and almond flour. If using, add food coloring.
  6. Pipe the shells: Transfer the batter to your piping bag and pipe circular dots onto prepared baking sheets.
  7. Prepare for baking: Bang the trays to release air bubbles. Let the shells sit for 20-40 minutes until dry.
  8. Preheat the oven: While waiting, preheat the oven to 300ºF.
  9. Bake the macarons: Bake one tray at a time for 15-20 minutes until firm.
  10. Cool the shells: Let the macarons cool completely on the baking sheets.
  11. Make the cranberry sauce: Cook cranberries, granulated sugar, and orange juice over medium-low heat for 10-15 minutes.
  12. Prepare the buttercream: Cream softened butter, then gradually add confectioners’ sugar and orange zest.
  13. Add flavoring: Mix in vanilla or orange extract and adjust buttercream consistency if needed.
  14. Assemble the macarons: Pipe buttercream on the edge of a shell, add cranberry sauce, and top with another shell.
  15. Mature the macarons: Refrigerate assembled macarons for one day before enjoying them.
