Instructions
- Prepare the Spice Blend: In a shallow bowl, combine the cinnamon, ginger, cardamom, nutmeg, all-spice, cloves, and pepper.
- Preheat and Grease: Preheat your oven to 350°F and grease a 9×5 inch bread pan.
- Mix Wet Ingredients: In a large bowl, stir together the mashed bananas, melted coconut oil, maple syrup, eggs, and vanilla extract until fully combined.
- Combine Dry Ingredients: Add the whole wheat pastry flour, baking soda, 1-2 tablespoons of your chai spice blend, and salt. Mix gently until just combined.
- Bake the Bread: Spoon the batter into your prepared pan, smoothing the top. Bake for 50-60 minutes, or until a toothpick comes out clean.
- Whip Up the Butter: While the bread is baking, whip together the salted butter and maple syrup until light and creamy.
