Ingredients

- 2 to 2 1/2 lbs Skin on chicken thighs
- 1/2 cup Fresh lime juice
- 3 teaspoons Fresh lime zest
- 1/4 cup Olive oil
- 4 tablespoons Fresh cilantro, chopped
- 2 Jalapeños, chopped
- 4 cloves Garlic, chopped
- 1 tablespoon Honey
- 2 teaspoons Salt
- 1 teaspoon Chili powder
- Additional garlic, cilantro, and jalapeño
Instructions
- Prepare the chicken by rinsing the thighs, removing the bones while leaving the skin on, and patting them dry with paper towels.
- Mix all marinade ingredients together in a large bowl using a whisk.
- Coat the chicken in the marinade by adding it to the bowl and stirring gently. Cover and marinate in the fridge for 2 hours.
- Preheat your grill and brush the surface with a little oil. Top the chicken with some reserved garlic, cilantro, and jalapeño from the marinade.
- Grill until the chicken is golden brown and charred on both sides, about 6-8 minutes per side.
