Description

Chili Lime Grilled Chicken is a vibrant, flavorful dish perfect for summer gatherings and BBQs.


Ingredients

  • 2 to 2 1/2 lbs Skin on chicken thighs
  • 1/2 cup Fresh lime juice
  • 3 teaspoons Fresh lime zest
  • 1/4 cup Olive oil
  • 4 tablespoons Fresh cilantro, chopped
  • 2 Jalapeños, chopped
  • 4 cloves Garlic, chopped
  • 1 tablespoon Honey
  • 2 teaspoons Salt
  • 1 teaspoon Chili powder
  • Additional garlic, cilantro, and jalapeño

Instructions

  1. Prepare the chicken by rinsing the thighs, removing the bones while leaving the skin on, and patting them dry with paper towels.
  2. Mix all marinade ingredients together in a large bowl using a whisk.
  3. Coat the chicken in the marinade by adding it to the bowl and stirring gently. Cover and marinate in the fridge for 2 hours.
  4. Preheat your grill and brush the surface with a little oil. Top the chicken with some reserved garlic, cilantro, and jalapeño from the marinade.
  5. Grill until the chicken is golden brown and charred on both sides, about 6-8 minutes per side.
